Fresh Corn Relish

When I owned my catering company, one of the most requested appetizer items was my fresh Corn Relish Dip.  Even now when I’m given the opportunity to design the menu as an event planner, I use this recipe when it fits the celebration style.  Most of the time I served it with Tortilla Chips, but its just as good with sliced French Bread and crackers or fresh raw vegetables.  This is the prefect recipe for any party.  Make sure you use only the freshest ingredients because that will effect the final outcome. 

Recipe for Corn Relish Dip

1 cup fresh corn cut off the cobb

1 small onion chopped

2 tablespoons butter

saute corn and onion in butter till tender, set aside

3 oz. Cream Cheese softened

2 tablespoons  sour cream

1 tablespoon mayonnaise

1 tablespoon Lime Juice (I like to use more Lime Juice than called for)

2 tablespoons chopped sweet red pepper

2 tablespoons chopped green onions

1 tablespoon minced fresh cilantro

1 teaspoon chopped jalapeno pepper

dash garlic powder

salt and pepper to taste

Mix together well and chill overnight.  Garnish with fresh parsley or Cilantro sprigs and serve.  You will be the hit of the party with this recipe!!
